Mexican Zucchini Casserole

So many zucchini, so little recipes. Running out of recipes to use up that zucchini this season? The great thing about this vegetable is that it’s versatile. It compliments any genre of food with its nature of taking on all sorts of tastes.
It is best to harvest squash while it’s reasonable small. It has more flavor that way and you’re not left with a giant zucchini that could feed a family of 20. However, if any do get kind of large, these are perfect to use as a bowl to fill with any sort of ingredients. I love tacos, so here’s my version of zucchini tacos! A low starch recipe too.
