Cornbread Cake

  • 1 C self rising cornmeal*
  • 1 C flour
  • 1 1/4 C milk
  • 2/3 C sugar
  • 1/3 C oil
  • 2 TBS melted butter
  • 2 eggs

*if you have plain cornmeal, add 1 TBS baking powder and 1/2 tsp salt

  • Mix in following order: butter, sugar, oil, milk, eggs, cornmeal, flour
  • Bake at 350 degrees in 7″x11″ pan for 20 minutes or 8″x8″ for 25 minutes
