- 1 C self rising cornmeal*
- 1 C flour
- 1 1/4 C milk
- 2/3 C sugar
- 1/3 C oil
- 2 TBS melted butter
- 2 eggs
*if you have plain cornmeal, add 1 TBS baking powder and 1/2 tsp salt
- Mix in following order: butter, sugar, oil, milk, eggs, cornmeal, flour
- Bake at 350 degrees in 7″x11″ pan for 20 minutes or 8″x8″ for 25 minutes
